Stuffed Bell Peppers

This is a super simple recipe, did it on a work night when we had some company over. Not only does it look pretty, it tastes delicious!


Ingredients:
3 Bell peppers, halved and insides cleaned 
1 large Onion, chopped 
1 shallot, chopped
4-5 button mushrooms, chopped 
1/2 cup raisins
1/2 cup apricots, chopped
1/4 cup dried cranberries
1 large tomato, chopped
3 tbs tomato paste
2 tbs lemon juice
1/2 cup feta cheese, divided
3 cups cooked couscous
