Oreo Cheesecake

Oreo Cheesecake Recipe

Crust:
2 cups crushed Oreo cookies
1/4 cup unsalted butter, melted
2 tbs sugar

1. Mix all ingredients and pat into a 9-inch buttered pie pan. 
2. Bake at 175C for 5 mins and remove from oven. 

Pie:
16oz cream cheese, room temp
1/2 cup sugar
2 tbs all-purpose flour
1 tsp vanilla
2 eggs

1. Mix all ingredients together and pour on pie crust. 
2. Bake at 180C for about 55 mins. 



Breakfast Lasagna

I love making breakfast and I always love to try new dishes with eggs. This time I combined lasagna with eggs and it turned out to be deliscious! It works for a brunch-type meal as it is a bit heavy, but it can work anytime in my opinion ☺️.

Ingredients:
8 eggs
1/4 cup milk
Salt to taste
5 sausages, slice into 1cm thick
Bechamel sauce (see recipe in this blog)
1/4 cup Mozzarella cheese, shredded
1/4 cup Emmenthal cheese, shredded
1/4 cup Gouda cheese, shredded
6 layers of lasagna

Preparation:
1. Whisk eggs, milk and salt. Prepare a non-stick frying pan and scramble eggs until done.

2. Lightly butter a glass oven-safe dish and add a thin layer of bechamel sauce. Arrange lasagna on top and layer with scrambled eggs, sausages and cheeses. Spoon over bechamel to cover and repeat. 

3. Cover the glass dish with aluminium foil and bake at 200C for 25 minutes. 

4. Remove foil and bake for another 5 minutes uncovered. 

5. Ready to serve with toast and strawberry jam or marmalade.

Creme Brulee


Ingredients:
2 cups heavy cream
1 tsp vanilla sugar, divided
1/4 cup sugar
3 egg yolks
4 cups boiling water

Preparation:
1. Bring just about to boil heavy cream and 1/2 tsp vanilla sugar. Stir constantly in the process. Remove from heat.

2. Whisk sugar with egg yolks until it lightens in color. 

3. Slowly add cream to egg mixture, stirring constantly. Whisk well and pour into ramekins.

4. Place ramekins in roasting pan. Fill pan half way up the ramekins with boiling water.

5. Bake in 165C oven for about 45 minutes. Custard will still be jiggly.

6. Remove from oven, cool and place in refrigerator for at least 2 hours.

7. Sprinkle sugar on top of custard and tourch to brown before serving.

Beef Kebabs

Easy to make and just needs 2 hour to marinate.  


Ingredients (16 skewers):
400 grams beef fillet, cut into cubes
1 small onion, cut & peeled
1 medium green bell pepper, square cut
1 medium red bell pepper, square cut
16 skewers 

Marinade:
Salt, pepper, garlic powder
2 tbs butter
1/4 cup soy sauce
3 tbs honey

Preparation:
1. Mix all ingredients for marinad, soak cut beef in the marinad and let sit for 2 hours. 

2. Arrange alternately on skewer beef, bell peppers and onions.

3. BBQ until done. Serve with rice cakes and peanut sauce. 


Bistik Jawa a la Swiss

Bistik Jawa, or Javanese beef steak, is a modified western steak. But I guess in the olden days in Java it was not easy to find steak and so it was modified. My version uses ground beef and I put a slice of cheese inside. That way it is extra tender (and gooey!) when you cut into it. 

Ingredients:
375 grams of ground beef
1.5 large onion, chopped
1/2 cup bread crumbs
4 tbs milk
1 egg, lightly whisked
1/2 tsp nutmeg powder
1/2 tsp sugar
Pinch of ginger powder
Pinch of salt & pepper
4 slices of cheese
4 tbs Vegetable oil
100mL warm water
2 tbs salted margarine
3 tbs worchester sauce

Preparation:
1. Stir fry onions with a bit of vegetable oil untill well done. 

2. Soak bread crumbs with milk until iy congeals.

3. Mix bread crumbs with ground beef, stir in all dry spices. Add onions but reserve 2 tbs for the sauce later. 

4. Add egg to mixture. Mix well. Divide beef mix into 4 equal parts. 

5. Cover hands with vegetable oil, mold beef into patties. Fill the center with a slice of cheese. Let sit for 5 minutes. 

6. Add 3 tbs oil onto frying pan and heat on medium high, fry beef, rotate frequently, for 3-4 minutes.  Flip beef and do the same procedure. 

7. Reduce heat to low, add warm water to the pan, cover and let simmer until the water almost all evaporated. Check for doneness- if patty is pierced with a skewer, the liquid comes out clear. Transfer patty onto plate. 

8. Use remaining liquid for the sauce by adding the rest of the onions, margarine, worchester sauce. Heat and stir until mixed. 

9. Serve with steamed vegetables and fries with mayonnaise. 

Kue Ruwok

This is a dessert from Koto Gadang, West Sumatra. One of my best friends' have shared the recipe to me but I modified it a bit to suit my taste. It is basically egg custard with meringue. Super yummy!


Ingredients for Custard:
6 egg yolks
2 whole eggs
500mL milk
1/2 cup sugar
2 tbs all purpose flour
1 tsp vanilla
Pinch salt
 
Ingredients for Meringue:
6 egg whites
2 tbs sugar
1 tsp cream of tartar
Raisins

Preparation:
1. With an electric mixer, beat all custard ingredients. Pour in a rectangular dish. Place dish in a water bath (upto 1/2 the height of the dish) and bake at 175C for 40 minutes. Insert a toothpick and it should come out clean when it is done. Custard may be a bit wobbly but as long as the toothpick is clean, it is set. 

2. Beat all ingredients for meringue except raisins until stiff. Pour evenly onto baked custard and put the raisins on top. Continue to bake at 200C for about 5 minutes or until the top is brown.

Meatloaf

I love to cook using the oven because you can do other stuff while your dish is cooking. Meatloaf is one of those dishes where you can prep-and-leave. Here is one really easy recipe that takes you 15 mins to prep and 1 hour to cook, leaving you lots of time to do other things around the house (or just chill with a glass of wine :-)).


Ingredients:
Meat Dough:
750g lean ground beef
1 large onion, chopped
1 large carrot, chopped 
1 large tomato, chopped
2 slices white bread, cut into 1x1cm squares, soak in 4 tbs milk
2 tsp salt
2 tsp pepper
4 tbs bbq sauce
2 eggs

Topping:
5 tbs tomato ketchup
2 tbs mustard
2 tbs brown sugar 

Preparation:
1. Mix all ingredients together, knead well, and place in a bread pan.
2. Spread topping over the meat dough, making sure you cover it well.
3. Bake in 180C oven for 1 hour, rotating half-way through.
